I got the idea for these beautiful tarts from Pinterest. They're super easy to make but look very impressive and taste even better. Go ahead and give it a try, you will not regret it.
What you need:
Package of Puff Pastry
2 red apples (I used Macintosh)
1/2 lemon
1 cup granulated sugar
1 tablespoon cinnamon
Unsalted butter, melted
Boiling water
What to do:
Preheat oven to 400 F.
Core the apples and cut them in half vertically. Place them cut side down and cut a small piece off the end. Slice your apples into very thin slices and try to get them as even as you can.
Fill a large bowl with boiling water and squeeze in the juice of half a lemon. Immediately add your apples to the water to soften. You can also use tap water, add your apples and then microwave for 3 minutes, but I found the apples kept their colour better when boiling water was used.
After about 10 minutes your apples should be soft enough to work with, keep them in the water as you work.
Roll out your puff pastry and using a rolling pin roll it out until it is about 1/8 of an inch thick. Cut the pastry into 4 strips about 2 inches wide (it does not have to be perfect as you can see from the picture below.
In a small bowl mix together the 1 cup of sugar and the 1 tablespoon of cinnamon (you can adjust this to your preferences).
Take one strip of the puff pastry and brush butter on the pastry. Begin to place your apples on the upper half of the pastry with about 1/4 inch over the top of the pastry. Layer the apples on top of each other as you move along the pastry. In the picture below I used caramel rather than the cinnamon sugar, which you can also do, but in the end I preferred the cinnamon sugar mixture better.
Leave a small bit of room at the front and ends of the pastry to make rolling it easier. Once your apples have been placed sprinkle the mixture with a 2 spoonfuls of the cinnamon/sugar mixture (or add more or less as you please) all over your pastry and apples.
Fold the bottom of your pastry up to meet the top of the pastry (the apple slices should be sticking out a bit).
Start from the left end and begin rolling the pastry. It does not need to be too tight because the pastry will expand when it bakes. The apples should be soft enough to roll with the pastry without breaking.
Once the entire pastry is rolled place it in a well greased muffin tin.
Continue with the rest of the puff pastry sheets until you are done (should make about 8 roses). you can spread out the apples a bit once you've placed them in the muffin tins to make the roses look more "open".
Place in the oven for approximately 15 minutes or until the edges have browned. The cinnamon sugar will probably have bubbled up, but that's okay it'll settle as it cools.
Remove from the oven and allow it to cool a few minutes before carefully removing the tart from the muffin tin one by one and placing it on a wire rack to cool completely or serve them while they are nice and warm with a scoop of vanilla ice cream.
How pretty are these? They really do look like roses too and they taste wonderful, the apples are soft and the cinnamon sugar caramelizes so nicely. Best of all they're pretty easy to make!
