I am loving overnight oats, it only takes minutes to prepare and they're so good for you, I'm not sure how it took me this long to discover them. I pre-portioned this recipe in 5 small mason jars, each portion totaling 150.2 calories. Remember, if you change the recipe you change the calories as well.
What you need:
1 cup rolled oats also called old fashion oats (do not use quick oats or steel cut oats)
1 cup non fat Greek yogurt (I like to use Astro Greek Yogurt because there is no gelatin added)
1 cup blueberries
2 teaspoons ground cinnamon
1 packet sweetner (you can use honey, sugar or skip this entirely)
2 tablespoons milk (you can use soy or almond milk instead)
4 pecan halves per portion (optional)
What to do:
Place the blueberries in a large bowl and microwave for 60-90 seconds or until the blueberries have gotten dark and are beginning to pop open. Using the back of the spoon gently press down on the blueberries to help extract the juices (but do not mash the blueberries).
Add the remaining ingredients and mix everything well making sure all the oats are coated. Place in a container with a lid or cover with plastic wrap and place in the fridge overnight or at least 8 hours. Top with pecans or anything else you like.
I like to use mason jars because it's easy to pre-portion the oats in them, they have a lid, stack easily in the fridge and are easy to grab and go in the morning.
You can enjoy this cold or heat in the microwave for a minute.
