Caldo Verde is a traditional Portuguese soup, made with kale, potatoes and spicy sausage. I used spicy beef sausage instead but you can use anything you like, the spiciness really does add to the flavour.
Ingredients:
1 bunch of Kale (approximately 1 pound)
1 medium onion, chopped
2 cloves garlic, minced
1 teaspoon oil
3 cups chicken broth
3 cups water
6 medium potatoes (approximately 2 cups), chopped into 1 inch pieces
1 or 2 sausages (approximately 1/2 pound)
Salt, to taste
Directions:
In a large stock pot heat the oil and add the onion. Cook for approximately 5 minutes on low heat, add the garlic and cook for another 2 minutes, don't let it brown. Cut the sausage into 1/2 inch pieces and add to the pot. Saute for a few minutes.
Add the chicken broth, water and potatoes. Put the lid on the pot and turn the heat to medium, let it simmer for 8-10 minutes.
In the meantime remove the stems from the kale, and wash the leaves. Finely chop the kale (like you would parsley). Add it to the pot and cook covered for 15 minutes. Remove the lid and season with salt.
Using a potato masher, mash some of the potatoes right in the pot to help thicken the broth but leave some chunks in tact. Continue to cook uncovered for another 8 minutes.
