It's been a while since I had one of these Canadian delicacies and since I can't find any in Atlanta I wanted to try my hand in making some traditional butter tarts. I have to say they are so much easier than I was expecting. Once you have your crust prepared it only takes a few minutes to put together. So gather your ingredients and start baking because these little buttery treats are so delicious!! Recipe adapted from Rock Recipes. This recipe will make 12 tarts and make a gooey tart rather than a runny tart.
Ingredients:
Pie crust (recipe here)
3/4 cup brown sugar
1/4 cup corn syrup (any kind will work)
2 eggs
1 teaspoon vanilla extract
1/4 cup salted butter, melted
Pecans, raisins, walnuts, optional
Directions:
Lightly grease a muffin pan and set aside. Preheat the oven to 425 F.
Remove the pie dough from the fridge and roll out the dough on a floured surface. I like the dough to be pretty thick because the filling is gooey it can withstand a nice thick dough.
Cut out circles using a 4 inch circle cutter. Press the dough rounds into the muffin pan.
Trim the excess pieces of dough using a sharp knife. If necessary re-roll the dough and cut out more circles.
Place the muffin pan in the fridge while you prepare the filling.
Mix all the filling ingredients (except the optional ones) and mix well using a whisk. Can you believe it's that easy, I promise it thats it!
If using any of the optional ingredients place a few pieces of nuts, or raisins, or both, on the bottom of the crust, then pour your filling over going 2/3rds the way up the crust.
If you are not using any nuts or raisins just pour the filling into the crust 2/3rds the way up.
Place the tarts into the preheated oven on the bottommost rack.
Bake the tarts for 13-15 minutes, until golden brown on top. They bubble up while in the oven but will go down once they cool. Allow them to cool in the pan for 15 minutes then remove from the muffin pan and transfer to a wire rack to finish cooling.
Once cool, try not to eat all of them at once. Or do!! Either way enjoy your delicious creation!
