Do you have bananas that look like this?? Time to make some delicious banana bread!

Ingredients:

3 or 4 ripe bananas, smashed

1/3 cup melted unsalted butter

1/4 cup sugar (can increase if not using choc chips)

1 egg, beaten

1 teaspoon vanilla

1 teaspoon baking soda

Pinch of salt (leave out if using salted butter)

1 1/2 cups of all-purpose flour

1 cup chocolate chips (optional)

1/2 cup walnuts (optional)

Directions:

Preheat the oven to 350°F . Mash your bananas with the back of a fork or with a potato masher until you get a gooey consisitency with some banana chunks.

Mix butter into the mashed bananas in a large mixing bowl.

Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add chocolate chips and walnuts (if using) and mix just until combined. Add the flour and mix. 

Pour mixture into a butteredor greased 4x8 inch loaf pan (you can also bake in muffin tins for mini ones). I added some walnuts to the top for garnish.

Bake for approximately 1 hour. To test for doneness stick a toothpick into the center for the loaf if it comes out clean it is ready, if it has dough stuck to it, continue to bake and check again in 5 minutes. 

Remove from oven and cool on a rack. Remove from pan and slice to serve
