Ingredients:

Strawberries
Chocolate Chips (I used semi-sweet, you can use dark or anything you like)
White Chocolate (optional)
Nuts (optional)
Vegetable oil (optional)
Parchment Paper

Wash your strawberries and using a paper towel make sure you completely dry each one. This is vital, otherwise your chocolate will not stick to your strawberries.

Using a double boiler, melt you chocolate chips over medium heat. Once the chocolate has begun to melt add just a touch of vegetable oil (approximately 1/2 teaspoon). This is just to ensure you get a gloss finish when the chocolate dries. Stir the chocolate constantly until just melted and remove from heat. 

Holding your strawberries by the leaves, dip them one by one into the chocolate, swirling them in the chocolate until coated. Lift and allow excess chocolate to drip back into the bowl. Set your strawberries onto the parchment paper to dry. Continue until you have as many strawberries as you like. Let your strawberries dry at room temperature. Putting them in the fridge will cause them to gather condensation and ruin the look.

You can leave your strawberries just like this or you can fancy them up a bit using your favourite toppings. If you would like to add a white chocolate swirl, put some white chocolate in a ziplock bag and heat 20 seconds at a time until your chocolate is melted. Snip a very tiny piece off the end of your bag and using like a piping bag, drizzle the white chocolate over your chocolate covered strawberry. 

If adding toppings, after allowing your chocolate covered strawberry to sit for approximately 5 minutes, pick up and roll in a bowl of your favourite topping, I used chopped walnuts and Skor bits, the possibilities are endless so have fun with it.
