I love making individual sized food, everything just seems to look so much cuter in its mini form. These brie bites are no exception. Perfect for appetizers, they can be prepared ahead of time and popped in the oven when your guests arrive. 

Ingredients:
Mini Brie Wheels (I bought these at the local Longos, if you can't find them you can just cut a piece of brie into 1 inch cubes)
Cranberry sauce (I prefer the one with whole cranberries rather than the jelly)
Pecans, toasted and roughly chopped
Puff Pastry, thawed
1 egg
1/2 tablespoon of milk or water

Directions:
Preheat oven to 400 F

Unroll the puff pastry and cut into thirds horizontally. Then cut it again into thirds vertically. This should give you 9 squares of puff pastry. 

Place a mini wheel brie in the centre of each square. Top each one with a heaping teaspoon of the cranberry sauce. 

Top each with a few pecan pieces. 

Grab two diagonal corners and fold them over one another. Now grab the opposite diagonal corners and fold them over one another. Pinch the seams to seal them. 

In a small bowl mix the egg and the milk (or water) and using a pastry brush, brush the egg wash over the puff pastry. 

Place into the oven and allow to cook for 10-12 minutes or until the puff pastry is golden brown. 

Carefully remove from the oven and allow to cool for 5 minutes before enjoying the flaky gooey goodness you just created.
