These cookies are very chocolaty and the perfect combination of crispy and soft and gooey all at once. These yummy cookies were adapted from this recipe found on Stepable

Ingredients:
1/2 cup unsalted butter
12 ounce bag semisweet chocolate chips
1 1/4 cups light brown sugar
3 large eggs
2 teaspoons vanilla extract
1/4 cup unsweetened cocoa powder
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
Semisweet baking chocolate, cut into 1 inch pieces (chocolate chunks will work too)
Marshmallows, cut in half (or mini marshmallows)

Directions:
In a saucepan melt the chocolate and butter over medium heat, stirring until melted. Remove from heat and set aside to cool for approximately 5 minutes.

In the meantime, using an electric mixer, mix the eggs, brown sugar and vanilla for approximately 30 seconds. Add the chocolate mixture and mix for another 30 seconds or until combined. 

Add the flour, cocoa powder, baking powder, and salt and mix just until everything is combined. At this point the mixture will be a sticky glob. Cover with saran wrap and place in the fridge for at least 2 hours. 

Heat the oven to 350 F

Remove the dough from the fridge, the mixture will have come together and hardened. Using a spoon take a golf sized ball of dough and roll it into a ball. Place on a parchment paper lined baking sheet, continue with the rest of the dough. 

Place the rolled balls of dough into the oven for 12 minutes. Remove from the oven and top each with a piece of chocolate (or chocolate chunk) and a marshmallow (I had mini marshmallows on hand so I used those instead). 

Place back into the oven for 4 minutes.

Remove from the oven and allow to cool a few minutes before enjoying them. They taste best while they're still warm and gooey as S'mores should be.
