I saw pictures of these cupcakes on Pinterest (although now I can't find the original post) so I thought I'd give it a try. They are so easy to make, and they look so pretty. Everyone loved them, and they taste delicious!!
What you need:
Cupcakes
Vanilla (white) Frosting
Mini Marshmallows (white or coloured)
Coloured sugar
Kitchen sheers
non pareils (optional)
What to do:
Apply a thin layer of frosting to the top of the cupcake. This helps the marshmallows stick to the cupcake, but it also helps conceal any gaps in the marshmallows so you don`t see the cupcake.
I used coloured mini marshmallows, but it is not necessary, you can use white ones the effect is still the same. If you do use coloured ones get coloured sugar to match the coloured marshmallows you want to use.
Using a pair of kitchen sheers, cut the marshmallows in half diagonally. When cut, the ends curl in a bit, giving it the dahlia petal shape.
Place the cut side down in a bowl of the coloured sugar and press down. The sugar will stick to the marshmallow because the exposed cut side will be sticky.
They almost look like bunny ears during this step.
Start from the outer edge and place the dipped marshmallow along the perimeter of the cupcake (with the sprinkle side facing up).
Then place another marshmallow half next to that one.
Continue with this method all the way around. Once you`ve gone around the whole cupcake begin one layer inside, placing a marshmallow where two marshmallows meet on the outer layer. Do this as best you can, sometimes the marshmallows line up and that`s okay too.
Continue adding layers until you get to the centre. You can finish off like this or you can add some non-pareils to the centre for a more flowery look.
Just add a little bit of frosting to the centre of the cupcake, then sprinkle some non-pareils and press them down into the frosting to secure them.
You can do all sorts of colours, get creative and have fun! I unfortunately forgot to take pictures of these set up, but I placed them on a sweet table on mini cupcake stands matching the colour of the flowers, they were so pretty and added great colour to the set up.
