I was feeling a bit nostalgic today so I decided to give this a shot. This pizza is so simple yet so delicious, a definite must try!
Here's what you need:
Pizza dough
1 cup Shredded Mozzarella Cheese
Ricotta Cheese
Dry Oregano
Dry Basil
4 tablespoons Olive Oil
1/2 teaspoon chopped garlic
Pinch of Salt (optional)
What to Do:
You can make the dough from scratch or you can buy your dough pre-made as I have (sometimes it's okay to cheat). All grocery stores will carry it, usually in the frozen section. Let your dough come to room temperature before working with it. This amount of dough was enough for two pizzas so I cut it in half. The recipe is for one pizza.
Preheat your oven to 400 °F.
In a small bowl combine the olive oil and garlic and set aside. Meanwhile, flour your hands and work station and begin rolling out your dough. I found gently pulling and turning the dough did the trick for me. It doesn't have to be perfect and you can make it as thin or as thick as you like.
If you have a pizza pan you can use it, if not you can use a regular baking sheet (I have used both so you can see). Oil the whichever you are using and once you have your pizza dough to the thickness you like put it on your pan and prick the dough all over with a fork to avoid "bubbling" of the dough when it cooks.
rush the entire top of your dough with the olive oil and garlic mixture. Sprinkle on the shredded mozzarella, you can use more or less than what I recommend depending on how cheesy you like it. Then dollop on chunks of ricotta cheese, using two spoons. Sprinkle a small amount of dry basil and oregano, and just a tiny pinch of salt to season.
Place your pan in the oven and cook for approximately 15 minutes or until your crust and cheese are a nice golden colour. Take it out of the oven, allow to cool for a few minutes and then enjoy!
