Let's admit it, the best part of going to Red Lobster is when those wonderful warm cheesy biscuits come to the table. Who can resist those buttery flaky mounds of goodness. This recipe is so easy to make, no mixer required and the biscuits taste even better than the original. Recipe adapted from Damn Delicious.
Ingredients:
For the Biscuits:
2 cups flour
1 tablespoon sugar
1 tablespoon baking powder
2 teaspoons garlic powder
1/2 teaspoon salt
1 cup buttermilk
1/2 cup unsalted butter, melted
1 1/2 cups old cheddar (or sharp cheddar), shredded
For the Top:
1/4 cup unsalted butter, melted
1 tablespoon parsley, finely chopped
1/2 teaspoon garlic powder
Directions:
Preheat oven to 400 F.
In a large bowl, add the flour, sugar, baking powder, garlic powder and salt and set aside.
In another bowl, mix together the buttermilk and melted butter. Pour the buttermilk mixture over the flour mixture and gently combine using a rubber spatula or wooden spoon just until combined. Add the cheese and mix until it is incorporated. Do not over work the dough, try to mix as little as possible.
Line a baking sheet with parchment paper and measure out about 1/4 cup of dough (I used an ice cream scoop to get them all the same size). Roll them into balls and then flatten them a bit. Place on the parchment paper and place in the oven for approximately 12 minutes or until the edges just begin to brown.
In the mean time prepare the topping by combining the melted butter, parsley and garlic powder. When the biscuits are done in the oven carefully remove the baking sheet and immediately brush the tops with the topping mixture.
Serve the biscuits while they're nice and warm. Just make sure you make enough, my brother scarfed down 5 biscuits before I could get anything else on the table. They really are that good!
