You've seen these beautiful golden crispy onions adorning steaks, burgers, and just about anything at many popular restaurants. But the only magic is in how they taste, they're so easy to make with a few simple ingredients and not much prep or cook time. Go ahead and have a restaurant quality meal in the comfort of your own home.

I paired mine with a perfectly seasoned and cooked steak but my husband hollowed out his baked potato and filled it with onion straws in his take on potato skins. Anyway you use them they really do add amazing flavour and crunch.

Ingredients:
1 medium onion (baseball sized)
1 cup buttermilk (or regular milk and 1 tablespoon white vinegar)
1 cup all purpose flour
1/2 teaspoon salt
1/2 teaspoon paprika
1/4 teaspoon chili powder
4 cups (for frying)

Directions:
In a deep skillet or pot heat the oil on high heat until it reaches 375 degrees or if you don't have a thermometer I will often do a test run by dropping one piece of onion in and if it starts to bubble up around the onion and the onion comes to the surface immediately instead of sinking, I know the oil is hot enough. 

In the meantime, peel the onion and cut it in half. Place the flat surface on a cutting board and using a sharp knife cut the onion into very thin slices. You want the slices to be translucent. You can also use a mandolin for this to get thin even slices. 

Place the sliced onions in a small bowl. If you have buttercream go ahead and use it, but if you don't you can make your own, like I did. Just add one cup of milk with one tablespoon of white vinegar, works like a charm! Add that to your  bowl of onions. Make sure the onions are coated with the milk and set aside while you make the flour mixture. 

In a slightly larger bowl mix together the flour, paprika, salt, and chili powder. 

Using tongs, grab a handful of onions from the milk and drop them into the flour mixture. Use a spoon to mix it so the onions are coated. 

Use the tongs to very carefully drop the flour coated onions into the hot oil. 

Fry the onions until they are golden brown. This should only take a few minutes so watch them carefully. 

Using a slotted spoon remove the onions from the hot oil and place into a paper towel lined dish. Continue with the rest of the onions until you are done. It is best to do them in smaller batches so the onions crisp up quickly. 

That's it, you're done. Now go ahead and top everything in sight with these bad boys and enjoy!
