These are so cute for a baby shower, for for a friend who just had a baby or just because you want some chocolate covered Oreos. Keep in mind, you can always skip the mini Oreos in this recipe and make regular chocolate dipped Oreos.

What you need:
Double Stuff Oreos
Mini Oreos
Lollipop sticks
Candy melts or chocolate

What to do:
Begin by separating the Oreos by holding the bottom cookie in one hand and the top cookie in another and slowly twisting. Take your lollipop stick and gently press into the cookie with the cream about halfway up the cookie.
Melt the candy melts or chocolate in a long narrow container, a think a mug works best, in the microwave at 30 second intervals. Mixing in between intervals to make sure it's smooth and the chocolate doesn't burn. 

Place a small dab of the melted chocolate on the cookie without any cream and gently press the cookies together to seal. You have to be gentle when handling Oreos otherwise they might crack on you. 
Continue this process with the mini Oreos on the opposite end of the lollipop stick. Allow the Oreos to sit for 30 minutes at room temperature or 15 minutes in the freezer to finish sealing. 
Now that you're ready to dip your Oreos you might have to reheat your chocolate (you will have to do this periodically as the chocolate cools). On a slight angle dip the Oreo straight into the mug and cover completely in chocolate, turn once to ensure both sides are covered in chocolate. 

Slowly pull the Oreo from the chocolate and gently tap the lollipop stick on the side of the mug to allow the excess chocolate to drip off the Oreo. Then gently scrape the back of the Oreo cookie on the side of the mug to remove chocolate from one end of the cookie. 

Place on a piece of parchment paper to dry. 
Once the chocolate has dried, repeat the same step with the mini Oreo side. 

I like to ensure that the Oreos are completely coated so I dip the Oreos twice, once the first coat is completely cooled I repeat the dipping steps one more time. Then allow to dry completely. 
To decorate you can use small sprinkles, as I have, just dab a bit of melted chocolate on to the back of the sprinkles and adhere to the dry Oreos. Finish off with a ribbon and there you go you have a cute edible baby rattles (not for babies). Again, you can use this tutorial for any sort of chocolate covered Oreos and design anyway you please. 

You can wrap these in baggies or an airtight container and they will last a month or so.
