I know what you're thinking, who cares it's just broccoli, but this broccoli has so many intense flavours that make it the perfect side dish and a fun way to kick up your ordinary dinner routine.
Ingredients:
1 bunch of broccoli, cut into pieces
2 tablespoons olive oil, divided
1 clove of garlic, chopped (alternatively, you could use the chopped garlic that comes in jars)
Half a lemon (or lemon juice)
salt
Parmesan cheese (optional)
Directions:
Preheat your oven to 350 F.
Wash and dry the broccoli thoroughly. **NOTE: it is extremely important to dry the broccoli well, otherwise it will steam in the oven and not retain its crispiness, if you don't have time to let it air dry, carefully dry the broccoli using paper towels**
Place your broccoli in a roasting pan, or oven safe dish. Add 1 tablespoon of olive oil, the garlic, and salt to taste.
Place your pan of broccoli into the oven for approximately 25-30 minutes (or until the broccoli has gotten a nice roasted crust around its edges), stirring it's contents a few times through out cooking to coat the broccoli with all the ingredients.
Remove from the oven, add the remaining 1 tablespoon olive oil, squeeze the juice of half a lemon over top and sprinkle with Parmesan cheese before serving.
It's that easy, and now you have a healthy and yummy side dish.
