For my Elvis fans, this name need no introduction. For the rest of you, here's a little fun fact, Elvis's favourite sandwich was peanut butter and banana, hence this homage to him. Overnight oats are so yummy, they're like chewy granola bars that pack some serious flavour. I pre-portioned this recipe in 5 small mason jars, each portion totaling 199.8 calories. Remember, if you change the recipe you change the calories as well.
What you need:
1 medium banana (mine was 178 grams)
1 cup non fat greek yogurt (I like Astro Greek Yogurt because there's no gelatin added)
2 tablespoons smooth peanut butter
2 tablespoons milk (I used 2%, you can use almond or soy)
2 tablespoons water (you can sub milk for this but again it changes the calories)
1 cup rolled oats, also called old fashioned oats (do not use quick oats or steel cut oats)
1 packet sweetner (you can use honey or agave nectar if you prefer)
2 walnut halves per portion (optional)
What to do:
In a large bowl add the peanut butter and yogurt and give it a very good mix. Make sure it's all incorporated together.
Cut the banana into small pieces and add to the bowl.
Add the rest of your ingredients and mix everything well until all the oats are coated. Transfer to a container (preferably with a lid) cover and place in the refrigerator overnight or at least 8 hours. Top with walnuts or any else you like and enjoy.
I like to place them in mason jars because it's easy for me to pre-portion them, they have a lid and they stack in the fridge and they're easy to grab and go in the morning.
You can eat these chilled or if you prefer you can heat them in the microwave for 1 minute.
