Thanksgiving just isn't thanksgiving without sweet potatoes covered in mini marshmallows. For those who are skeptical, try it and you'll never go back to ordinary sweet potatoes again. 

Ingredients:
6 medium sweet potatoes
2 tablespoons brown sugar
1/4 cup unsalted butter
1 tsp cinnamon
1/4 cup orange juice
Mini Marshmallows (I know you're thinking this sounds odd but trust me you will love it)

Directions:
Preheat oven to 400 F. 

Scrub sweet potatoes under running water, place on a baking pan and roast in the oven for approximately 1 hour, or until a knife easily slices through the thickest part of the sweet potato.

Once cooked carefully remove from oven and allow to cool for 15 minutes or until cool enough to work with. Turn the oven down to 350 F while you make the sweet potato mixture. 

Peel the sweet potato and place in a large bowl. Using a potato masher or fork mash the sweet potatoes. 

In a small bowl melt the butter and mix in the brown sugar. Add it to the sweet potatoes, add the cinnamon and orange juice as well and give it a good mix until everything is well incorporated. 

Pour the mixture into a pyrex dish or baking dish (9 x 12 is a good size). Cover with foil and place in the oven for 30 minutes. Remove from the oven and place one layer of mini marshmallows on top, pop back into the oven uncovered for approximately 5 minutes or until the marshmallows have browned. You have to watch it pretty carefully so the marshmallows don't burn they can go from toasted to burnt pretty quickly.
