These are the perfect little appetizers that can be made in advance and popped into the oven when the guests arrive.

Ingredients:
Tortillas
1 lb Ground beef
Oil
Onion, chopped
Taco seasoning
Cheese, shredded (I used cheddar but you can use any kind of cheese you like)
Sliced olives
Sour cream
Tomatoes, chopped or salsa
Cilantro, optional
Green onion, optional

Directions:
In a heavy saute pan heat the oil and add the onion, cook for 5 minutes. Add the ground beef and brown until fully cooked then drain to remove excess oil. Transfer back to the saute pan and add the taco seasoning with 1/4 cup of water. Allow the mixture to cook until all the water has evaporated. The seasoning usually has enough salt, but taste and add salt to taste, if needed. Set aside. 

In the mean time using a 3 inch cookie cutter cut small rounds out of the tortilla. 

Preheat oven to 350 F.

Press the tortilla rounds in to the bottom of a mini cupcake pan, folding where needed to make it fit. 

Add a spoon full of the ground beef mixture and using the back of a spoon pack it in.

Add a layer of cheese. Then place a few olives on top. 

Place into the oven and bake for approximately 15 minutes until the tortillas have crisped and browned around the edges.

Remove from the oven, add a small dollop of sour cream. Top with fresh tomatoes or salsa, sliced green onion and then garnish with a cilantro leaf.
