This recipe comes from my lovely sister-in-law and fitness guru Cari. She's doing a guest post for Baking Care of Business with this delicious, and super easy to make detox soup.
This recipe makes 2 cups of soup mix, which makes 10 cups of soup. Recipe from Julie Daniluk's amazing cookbook, Hot Detox.
The Dried Soup Mix:
The beauty of this soup, it is healthy, cheap, delicious AND you can do most of the work in advance!
If you have the dried soup mix pre-made and at the ready, this soup is perfect for days when you're feeling under the weather or are short on time.
Use a half-quart (2 cups) Mason jar and layer the following ingredients inside. If you do this carefully, these make adorable little gifts! And you can easily multiply this recipe to make a few jars to have on hand.
- 1/2 cup dried green split peas or split mung beans
- 1/2 cup dried split red lentils
- 1/2 cup quinoa or kasha (toasted buckwheat groats)
- 2 Tbsp unsweetened dried shredded or flaked coconut
- 2 Tbsp onion flakes
- 2 Tbsp dried parsley or cilantro
- 2 Tbsp dried basil
- 1 Tbsp curry powder
- 2 tsp pink rock sea salt
- 1/2 tsp garlic powder
Cooking the Soup:
When you're ready to cook the soup, grab one jar of the mix and the following ingredients:
- 7-8 cups bone or vegan broth or water (frankly, you can use whatever you have - I often use store-bought chicken stock)
- 14 oz can organic coconut milk
- 2 Tbsp organic lemon juice
Add the contents of the jar to a medium saucepan with the broth or water. Bring to a boil, then simmer for 45 minutes. Add the coconut milk and lemon juice, stir well, and enjoy!
