The fun thing about this recipe is you can put as little or as much of anything to suit your own tastes, that's why for the most part I'm leaving out measurements.
What you need:
10" Tortilla (I used white, but you can use any kind you like)
Lettuce
Canned corn, rinsed and drained
Canned black beans, rinsed and drained
Sour cream
Shredded Cheese (optional)
Chicken (optional)
Salsa (recipe here)
1 tsp Oil
Salt and red pepper, to taste
What to do:
Preheat oven to 375 F.
In a small bowl mix 1 tablespoon water with 1 teaspoon oil and brush over one side of the tortilla. Sprinkle salt and red pepper on wet side. Using a bowl, or crumple a piece of foil into a fist sized ball, drape the tortilla over and pleat as required.
Place in oven or 10 minutes or until crisp and golden. Note: sometimes the tortilla will develop air bubbles and puff up in the oven, in order to avoid this pierce a few small holes with a fork on the oiled side of your tortilla.
Remove from oven and allow to cool.
In the meantime, cut your lettuce (the smaller the pieces the easier it is to eat and fit into your taco shell) and prepare your salsa.
Once your taco shell has completely cooled begin assembling your salad, add the lettuce, beans, corn, cheese, salsa, chicken and sour cream (I find that the salsa and sour cream give it enough flavour that no dressing is required, but if you like you can add some balsamic vinegar or any other dressing you desire).
And you're ready to eat. It's that easy to make a taco salad at home!! Obviously, you can have this salad without the taco shell and it's still just as yummy :)
