Ingredients:
2 - 19 oz cans of chick peas (also called garbanzo beans)
1/2 cup tahini
1/2 cup lemon juice
1 clove of garlic
6 tablespoons of olive oil
Salt, to taste
water, as needed
***Process the ingredients as directed and not in a different order, it makes a difference for the consistency of the hummus***
Directions:
Using a colander drain the chick peas and rinse them well with water and set aside.
Place your tahini and lemon juice in the food processor and process for 30 seconds. Scrape down the sides and process for another 30 seconds. You will notice you get a nice creamy consistency that has lightened in colour.
Add the lemon juice, olive oil and salt to the processor and process for 30 seconds. Scrape down the sides and process for another 30 seconds.
Add half the chick peas and process for 1 minute. Scrape down the sides and add the remaining chick peas and process for another minute. You might notice that the mixture is still quite thick, add water in a steady stream one tablespoon at a time until you get a nice creamy consistency while continuing to process for approximately 3 minutes.
Transfer to a bowl or plate add a little olive oil and paprika to the top for garnish and serve with fresh veggies, pita chips, or anything else you can think of.
